I made these last night but used granular Swerve instead, as that is what I had. I was a little light handed with it – so maybe a quarter inch below top on my steel 1 cup measure. I was still worried it would be too sweet due to the difference in granular and confectioners. It actually turned out perfect for us. Husband and I both love them. Crust held together, but was really buttery and a little loose while still warm, but so, so good. Stored in fridge, it firmed up nicely and is delicious cold as well. A great recipe. Will order the powdered erithritol for next time.

Because it is exactly what many of us have been searching for, in a way of eating (diet), and you’ve wrapped it up so succinctly. If, after 3 years of eating and preparing food this way, you find eating keto this easy, simple and sustainable, and it meets your ethical needs at the same time, then you’ve really shone a light in the direction most of us would like to go with this. As a relative newbie of a couple of months on keto, I am inspired, relieved, encouraged, to approach this lifestyle in a less info-laden, more simplistic way after reading your excellent article. I wanted to put it out there that I made this meal plan specifically with women in mind. I took an average of about 150 women and what their macros were. The end result was 1600 calories – broken down into 136g of fat, 74g of protein, and 20g net carbs a day. This is all built around a sedentary lifestyle, like most of us live. If you need to increase or decrease calories, you will need to do that on your own terms.
My question is – where do you suggest I start? I have never done Keto, but I have done South Beach several years ago and lost 28 lbs on that so I know I’m ok with no carbs. Is it best to start with the 3 day plan? Or best to do one of your fasts first? Should I ease my way in or do your super strict 30 day Keto challenge? I’d love to know the pros & cons of where to start.
Of the many benefits of a keto diet, weight loss is often considered No. 1., as it can often be substantial and happen quickly (especially for those who start out very overweight or obese). The 2013 study published in the British Journal of Nutrition found that those following a keto diet “achieved better long-term body weight and cardiovascular risk factor management when compared with individuals assigned to a conventional low-fat diet (i.e. a restricted-energy diet with less than 30 percent of energy from fat).” (2)
On the standard keto diet, you plan all meals and snacks around fat like avocados, butter, ghee, fatty fish and meats, olives and olive oil. You need to get about 150 grams a day of fat (the amount in nearly ¾ cup of olive oil and three times what you are likely eating now) in order to shift your metabolism so it burns fat as fuel. At the same time, you need to slash your carbs from about 300+ grams per day to no more than 50 (which is about the amount found in just one blueberry muffin). That means sticking to leafy greens, non-starchy veggies, and low-carb fruits like berries and melon. Finally, you'll eat a moderate about of protein, which is about 90 grams per day or 30 grams at each meal (think 4 ounces of meat, fish, or poultry).

The whole chicken we got was $1 per pound, which is a great deal! You can sub in thighs or legs if you find those to be cheaper. Try to get it with the skin on so your meat comes with some fat! In the videos we got 2 pounds of sausage at $3 per pound. That’s a deal we couldn’t pass up! You can substitute any sausage in for that(check for sugar) or you can opt for ground beef. Make sure you get 80/20 fat/protein ratio or higher(it will be listed on the packaging).
This plan entails eating about 120 grams of protein per day (or four 4-ounce servings of meat, fish or poultry) and around 130 grams of fat per day. Carbs are still restricted to less than 10% of daily calories. But many people find this modified keto diet easier to follow, because it allows you to eat more protein and less fat than the standard keto diet. The caveat is that this approach may not result in ketosis, because like carbs, protein can be converted into glucose for fuel. But the high-protein keto diet will generally result in weight loss.
Rich in gut-happy bacteria, yogurt is a great way to add a little sweetness to a Keto diet. Although you can find Greek or low carb coconut yogurts on many grocery store shelves, why not get creative and make your own? Most people do not need fiber or vegetables to maintain a healthy diet. Those are all unproven hypotheses mandated by the FDA and our governments that keep us fat, sick and dependent on big pharma and big food companies. There are loads of people that have been eating a purely carnivorous diet, as well as ketogenic, who are healthier than ever. I am one, to be sure. Plus, the actual science that backs it up and proves it is overwhelming, unlike the standard American diet (SAD). The results are in, and low-fat, low-calorie, high fiber diets aren’t sustainable or beneficial for the majority of humans. Look at the uptick in diabetes and inflammatory diseases in the last 60 years. Do the research. Don’t knock it till you’ve tried it. 😉
Keto diets are high in healthy fats and protein also tend to be very filling, which can help reduce overeating of empty calories, sweets and junk foods. I have pancreatitis, well controlled, which is the way I want to keep it. The biggest difficulty I have with keto is this: I eat a small portion of steel cut oats in the morning. When I don’t, within two days , I start having bleeding, dark in colour. My endrocrinolagest feels that I need the roughage in the steel cut oats to replete the bowel lining. I have great difficulty loosing weight, always have, even though I eat very clean, no junk food, never eat out, don’t like pop, don’t crave sugar, cook all food fresh. Any comment? Willing to try anything you can suggest.
I just don’t understand why people still need it. I am so elated to be free from its hold! They will say, “Look what I found!” They’ll show a label that says “LOW CARB” or “KETO.” It often has a list of ingredients that is as long as one’s arm. Or it is a low-carb version of some high-carb treat, like candies, syrups, sweets or desserts. Artificial sweeteners abound. High-priced supplements, MCT oils and exogenous ketones are common.
