I have made the Cloud Bread/Oopsie Bread a couple of times (got a new KitchenAid 5Q mixmaster for Christmas which helps with the stiff egg whites!), however, my challenge is that they go absolutely FLAT to a point I cannot slice them for a sandwich. I wind up making "open'faced" style instead. I do add cream of tartar and I whip the egg whites until they are mountains we can ski on. What else can I do, or, what am I doing wrong?
The yeast in this low carb and keto bread ensures a wonderful texture and taste. Now, how much your bread will rise (and fall!) post-bake depends quite a bit on your altitude. But note that you still won’t get that gummy and wet texture here of most low carb breads. Plus, as mentioned, we’re baking at over 7,000 feet (Mexico City here!!), so if we can make this keto sandwich bread work so can you.
Toasting it did no good as it had that “plastic” smell that Mizzsingbabe mentioned. I tried cutting a very thin piece, loading it with butter, garlic powder, salt and grilling in cast iron fry pan, then broiling it but still cannot get past the plastic/smell taste. So I wasted 3 cups of (not cheap) almond flour along with all the other ingredients.
Asking whether or not you should exercise is foolish. You should exercise at the very minimum once a day, regardless of your diet as it makes for good lifestyle, not good diet. Every day you brush your teeth (I’m hoping!), so why can’t you do something with a little momentum as well? Exercise is anything that gets your heart beating fast, or makes you sweat. Be it sexual intercourse (I’m not promoting), or just going for a jog, anything will make the diet work 2x as fast. I’ve been doing the bread diet for a while but I have some good pointers to add. Keep in mind, though it says 12-16 slices a day, that doesn’t mean you should eat 12-16 slices every day. That just means you should limit it there. A good idea is to constantly drink water all day long, but the best idea is to NOT schedule times for you to eat. If you’re consuming food when you’re not hungry, then those are pointless calories to be eating in the first place. ONLY eat when you’re hungry. In addition to the segment of complex carbs, wild rice and pasta are also good for those who are endurance exercisers (long distance running etc etc). However, I suggest that no matter what you’re eating, as an additional NATURAL colon cleanse method, you should make room for peppers. Peppers are great antioxidants, have more vitamin C than oranges, good doses of vitamin A and K, increase metabolism, heighten mood, prevent cancer (lycopene), decrease cholesterol (capsaicin), and believe it or not, they do NOT have any link to ulcers. With the high fiber already in this diet, digestion problems with eating peppers are more likely to subside than bother those more sensitive stomachs.
First of all, the idea that fat will make us fat is a huge misconception in our society. In fact, the exact opposite is true. The fat in our bodies is actually a stored form of glucose. When blood sugar levels become too high, insulin levels rise in order to carry glucose into the cells for energy production. When the cells have an adequate amount of glucose to fuel themselves, the excess glucose is stored in the liver and muscles or deposited as fat. In other words, excess carbohydrates (glucose) increases fat build up, not necessarily dietary fat.
Kale, mushrooms, onions, etc all have a surprising amount of carbs, but aren’t included in this three day kickstart. The weekly menu plans have specific serving sizes but it’s not necessary in this three day kickstart if you eat on plan and don’t deviate – as proven by the hundreds if not thousands of people who have had success with it. If you follow the three day kickstart as written you will get into ketosis.

I just realized it after I placed my order through the first link, which is from your amazon store- The Frontiers Psyllium. I’m hoping that one works for the bread as good as the Jay Robb Brand!

Maria, I made your bread using NOW psyllium, it tastes more like a loaf of real bread than anything I’ve tried. It’s lots better than the pricey Low Carb Bread Company loaves that I have been buying on Netrition. I had previously tried a similar recipe that had coconut flour, and even though I added quite a bit of onion powder, the coconut flavor was still distinguishable, and I’m not a fan.
Hi anne, this sounds sensible! I've been on keto very gradually, still not entirely there (I have a cheat night once a fortnight-for social reasons). I started in the thick of winter, which has been great, but I used to love stone fruit, and they are starting to be in season again... i was thinking of being keto seasonally, and still being on partially keto during summer, but adding stone fruit... what do you tink about that? Hi Eva, That’s awesome that you are helping your son this way. I haven’t tried this with other tools, but you could probably use either the blender or the food processor. The key is to pulse in step 5, not just constantly blend, so that the whites don’t fully break down. Other than that, it should be pretty similar. As for the yolks, if you don’t want to make creme brulee, I usually just put a couple extras into an omelet (or breakfast casserole, or any other dish requiring cooked eggs) mixed with whole eggs.

Hello. I’m a kept newbie. Started 6 days ago today. By day 4 I was down 10lbs. I’m following the 20 or less carbs a day, altho I more like less than 10 on most days. I have only wanted to harm someone for a cookie twice, and my bf for his fried potatoes once. I’m honestly shocked at how much food I really can eat with no carbs. And then on some days, shocked at how many carbs are in other things. Headaches and lack of energy are the only thing that I find bothersome, but i am pushing thru it. Thank u for a very detailed site. It’s helped me, and a coworker.
Simply, this is a lovely bread recipe to have on hand no matter what. You will love this fluffy aromatic bread. Made with no yeast and in one bowl, it’s actually kind of unbelievable how tasty it is considering the usual process that goes into making bread. The end result is for everyone, and just so happens to be super low in carbs, gluten and grain-free!
because the recipes don’t mention quantities it’s hard to know how much it’s okay to eat of the carb foods. How much carbs is in those foods like kale, cauliflower, lettuce a.s.o. What about mushrooms ? Love to use them as a ‘filler’ instead of bread. Also hard to know how much is too much protein? Cheese, meat, bacon, yoghurt, tuna…. they all are full of protein.
Hi Gigi, Low carb and keto is about the balance of macronutrients eaten (fat, protein and carbs), not specifically meat or lack thereof. Most people on keto do eat meat, though some people do vegetarian keto. Fat is actually necessary for many body processes. There is no issue for the kidneys with a high fat diet, but if you eat too much protein that isn’t great for the kidneys. It’s a common misconception that keto is high protein (it isn’t). Keto is great for diabetics as it naturally helps stabilize insulin. All of this being said, please know I’m not a doctor and you should consult your doctor on any medical questions or before starting any diet. You actually give us a plan to get started and I love your humor :) I’ve tried living keto before but it was the diet along with a lot of supplements and nasty shakes…it wasn’t for me! I really like this recipe and it's been a lifesaver for me. I'll use it for hot dogs and grilled cheese and sandwiches. I double all the ingredients and add about a third of a cup of almond flour. I spread it out on parchment paper and cut it up into pieces. It is ok if the batter is runny. You just spread it out thin on the parchment paper and it will rise and become a thin bread.
I've been hesitant about keto baking; seemed like a lot of work and I would just rather skip it all. However, I decided to make these for the first time for my Easter dinner. I was a little nervous since I had read that sometimes the batch will fail without really knowing why or I was afraid that maybe I over mixed or under cooked. So I was really excited to make this bread. Went and bought all the supplies. The bread didn’t come out good at all. The outside looked good but when I sliced it the center was still moist. So I put it back in the oven with the tented foil probably for another 30 to 45 and still most. I’m def bummed that I waisted a whole carton of eggs. Is there something I could’ve done wrong?

I just wanted to point out that J Robb’s Psyllium Husk package declares the presence of WHEAT. Read the label listed on his website. Using his Psyllium Husk would make the bread NOT gluten free. It also states that it has a multitude of other allergens and possibly all of them are in a package at the same time. Just a heads up.

This way of eating has made me feel better in so many ways. I just had such a craving For the texture of cake or bread last night that I had a piece of cake and a sandwich wrap! I knew I had to find a way to satisfy that craving and considered eating a sandwich once a week. Now I can do it without too many carbs. Thanks for taking the time to make it come out right. Your body is going to be like an angry child having a tantrum – IT WANTS SUGAR AND CARBS NOW, but you aren’t going to give it any are you? ARE YOU??? Just like with children, the key is to distract, distract, distract (oooh shiny!). Give it something else desirable, (bacon, cheese, etc.) even if it isn’t what it really wants. Don’t give in thinking you’ll feel better if you just eat a little bit of carbs – there is no compromising!
