LOVE this bread. As a pregnant type 1 diabetic, I was looking for something to toast. I’ve tried multiple different recipes from other sites, and the bread is always so crumbly that you can never spread anything on it. This one is AMAZING! I may have to experiment with more water so that it comes out less dense, but soooo happy to prevent blood sugar spikes with future sandwiches. I can even foresee being able to have traditional burgers again (not just wrapped in lettuce). My husband bakes his own “normal” bread, and now I get bread too and its even easier to make than his 🙂
Today is day one! Breakfast was delicious. So happy I found your blog and thank you for the recipes and especially the shopping list! You’ve left me with no excuses and actually a little bit excited to begin this 21 day adventure. This is huge. I’ve done Paleo before, felt good, but it didn’t last long term. My body needs to be low carb, no sugar, so again, thank you.
And the one thing to keep in mind is that your bread will likely fall slightly post bake. Blame it on the lack of starch (keto flours are notoriously heavy and moist) and certain missing proteins (think gluten). Just keep in mind that we’re baking at ridiculously high altitude here, so if our loaf was still nearly double it’s volume after cooling- odds are yours will be even better!
I too started Atkins years ago- back in the ‘80’s. I did well as long as i stuck to it. But, it’s a tough road and restaurants and snack food companies are not very low carb friendly. It’s all too easy for me to grab something quick & the donuts in the break room do me in everytime!!! I read your post this morning & It inspired me. I also am 57 and have been discouraged lately with my weight and lack of ability to stay away from carbs. But, I am going at it again – and this time with a vengeance. Thanks again for your post – very inspiring & appreciated. By the way – I found that Mellissa’s website the best for keto. Her recipes are simply delicious and not over complicated or time consuming. She also has a great sense of humor. It’s nice to know she goes through the same trials we do – and what it’s like to mess up !! !!. At the core of the classic keto diet is severely restricting intake of all or most foods with sugar and starch (carbohydrates). These foods are broken down into sugar (insulin and glucose) in our blood once we eat them, and if these levels become too high, extra calories are much more easily stored as body fat and results in unwanted weight gain. Nice and firm. Baked it on the recommended temp, added 6 or 7 minutes. Pressed the middle and it was great. I let it cool. What was nice about it was obviously it’s low carb bread…hurray for that, but it cut well. Got 18 slices easily about 1/2 inch thick without breakage. Most importantly, it wasn’t greasy, or almond tasting overload, just delicious.
I see your point – but at the same time some people are squeamish about the normal terms and when I first heard shark week I laughed out loud so I thought it might be fun to inject some humor into a sometimes totally humorless subject, especially for people who have really painful and debilitating cycles every month. I’m tired of hearing people say that bread is not good for you, especially someone who tells me they want to lose weight, and then goes on to lecture me on how bread is fattening and they won’t eat it. I say nothing while watching them ingest a 12 oz steak, baked potato with butter and sour cream, and anticipating dessert …but they would not touch the bread!
I used the coconut flour, Now whole psyllium husks (ground by me), and whole eggs…this bread is exactly what I have been looking for, for such a long time. Yes a bit dense with the whole eggs but super-tasty nonetheless. I know if doing egg whites would make a bit lighter. Mine did not turn purple either, and I didn’t order a special pan, just used a regular loaf pan. Also, used coconut vinegar instead as all I had on hand and subbed perfectly. You are right. It’s not 2g it’s 4g per mug bread. We use 30 grams of almond flour which is 6g carbs and 1g from the egg which is 4g net carbs. I’ve corrected it. My earlier calculation was with ‘Trader Joe’s Almond Flour’. Bob’s Red Mill is what’ I’ve used now. Also almond flour = ground almonds which have 10g net carbs per 100g so we’re anyway looking at 3g net carbs for 30 grams of almond flour plus the .7g from the egg. So 4g is about right.
I am a little confused about beating the egg whites with a hand mixer. I used 12 large egg whites as the recipe says. However, I did not add cream of tartar as I have none. I have been beating these egg whites for almost 40 minutes with an electric hand mixer and I still have not yet come to the consistency as your photo shows for stiff egg whites. So my questions are, is this amount of time normal for beating the egg whites? And what amount of time would you recommend if this is not the normal amount of time?
I eat relatively healthy and fairly low carb (I am already gluten free). I am interested in getting into Ketosis for the the health benefits, but am quite thin for a guy and don’t want to lose any weight. I look at the sample diet above and am pretty sure I would drop weight quickly (I consume about 2,500+ calories daily now). I eat 3 meals plus 2-3 snacks (snacks mostly of nuts (with raisins that would have to go), greek yogurt (would switch to plain), peanut butter, cheese and fruit (would need to reduce qty)). Would eating straight up butter be ok for additional calories also once I am in Ketosis?
Divya, I’m happy to hear the flavor was great, but sorry to hear the bread was flat! I’ll try to help you troubleshoot…first I would check to make sure that your baking powder is fresh. Also, did you use the full cup of egg whites? Did you use a 9 by 5-inch loaf pan? Did you cook it at 350F and is your oven properly calibrated? Did you bake it for the amount of time the recipe calls for?
Hi Sahil, this is the first time I have seen a video from am so used to the 800Watt that and I love the way you show us how to make the Keto bread in a mug. But can you pleas tell me how many Watt your Microwave is as my new one is 1200 Watt and I am so used to the old 800Watt Microwave that I noticed that everything is getting cooked much quicker and I don’t want to over cook the bread.
1) Fat weighs less than healthy muscle… EVEN IF you are not showing a loss in the scales… check your clothes.. they’ll be fitting better… If you lacked good muscle tissue.. eating the protein will rebuild that. If you were VERY out of shape, your body will feel GREAT with all the new muscle, but it DOES weigh more… that will not stop you from losing, you just need to stick it out… you will lose inches even if you’re not losing lbs…

What a great post. I thought i would add about the selection of food you eat on keto and that everyone is different. Some food gives you energy and some doesnt, this varies person to person. I started and quit keto 3 times before i managed to find my balance. The first few times it made be poorly, from the shock of diet change. However, you can wean yourself into the diet which i did the last time when i had the most success.
Hi I made the Easy paleo keto bread 5 ingredients. It was moist, texture was good but it didn’t turn out completely white, more like a pale yellow and the crust was overdone. I opted for honey as my sweetner because this bread is for my nephew who has autism and we want to keep it as natural as possible. I baked the bread exactly at 325 for 40mins uncovered and then another 40mins covered (tent). What could I do next time to achieve a white bread with golden crust?
Asking whether or not you should exercise is foolish. You should exercise at the very minimum once a day, regardless of your diet as it makes for good lifestyle, not good diet. Every day you brush your teeth (I’m hoping!), so why can’t you do something with a little momentum as well? Exercise is anything that gets your heart beating fast, or makes you sweat. Be it sexual intercourse (I’m not promoting), or just going for a jog, anything will make the diet work 2x as fast. I’ve been doing the bread diet for a while but I have some good pointers to add. Keep in mind, though it says 12-16 slices a day, that doesn’t mean you should eat 12-16 slices every day. That just means you should limit it there. A good idea is to constantly drink water all day long, but the best idea is to NOT schedule times for you to eat. If you’re consuming food when you’re not hungry, then those are pointless calories to be eating in the first place. ONLY eat when you’re hungry. In addition to the segment of complex carbs, wild rice and pasta are also good for those who are endurance exercisers (long distance running etc etc). However, I suggest that no matter what you’re eating, as an additional NATURAL colon cleanse method, you should make room for peppers. Peppers are great antioxidants, have more vitamin C than oranges, good doses of vitamin A and K, increase metabolism, heighten mood, prevent cancer (lycopene), decrease cholesterol (capsaicin), and believe it or not, they do NOT have any link to ulcers. With the high fiber already in this diet, digestion problems with eating peppers are more likely to subside than bother those more sensitive stomachs.

Oats are also richer in protein than wheat (about twice the amount), which is obviously beneficial if you’re trying to build and repair muscles; they have a bevy of vitamins, like vitamin E, and nutrients, like iron and calcium. Oat bread may contain whole grain oat groats, steel cut oats, and thick oats.
Once your yeast is proofed, add in the egg, egg whites, lightly cooled melted butter (you don't want to scramble the eggs or kill the yeast!) and vinegar. I've been hesitant about keto baking; seemed like a lot of work and I would just rather skip it all. However, I decided to make these for the first time for my Easter dinner. I was a little nervous since I had read that sometimes the batch will fail without really knowing why or I was afraid that maybe I over mixed or under cooked. But thankfully, it all worked out splendidly!
Great to read. Totally agree. Initially looking for "special" products put so much pressure on me that it almost became effort and just easier not to eat keto. Until i realised how simple it can be. No need for complications. Few basic items, few basic principles - only 7 months but I'm really compliant and comfortable with my recipes and eating and the results. And shopping is super easy. Just need to get my son onboard now ☺
